Google Sky Map is mine.
http://www.google.com/mobile/skymap/ Just point your phone anywhere and see the stars, planets and constellations that are there. You don't even have to go outside.
After that, maybe Google Translate. You can either type or speak a word, phrase or short sentence and get a pretty damn accurate translation most of the time.

Planets is awesome.
IMDB is something I use most days.
Amazon is one of the best apps I've used in terms of functionality. The eBay app is equally good.
iTranslate is good.
For recipes I often use BigOven.
TouchTerm SSH client and FTP On The Go have both saved my arse (and this forum) numerous times.

Unfortunately we don't have amazon here in Australia. The last order I made from amazon.us took 3 months to arrive.
Wikipedia is very useful and so is xe.com to check exchange rates.
Gamebox 1 and 2 and Angry Birds are my apps of choice for entertainment.

I second Angry Birds although it's a bit finicky on my Huawei Ideos. I like Scanner Radio. It's a police and emergency services scanner app. It gets it's feed from radioreference.com which you can just listen to on your computer. Pretty cool.
Google Sky is cool but inaccurate. One night during a full moon I pulled it out and it was wrong by about five degrees.

I've got something called Smart Reader that came preloaded on my Optimus 2X. You can take a picture of typed text and it will recognize it and translate it into another language that you select. And it has buttloads of languages available. You just tap the word you need to know and it comes up in your target language.

Is there an app that removes apps? I don't give a fuck about Nascar, Sprint, really I don't. Even if I'm in Missouri I don't give a damn about somebody whose sole skill is turning left for five hundred miles.

Edit: Well, notice how nicely Mercury, Venus, Mars, the moon and Uranus line up to the sun atm...It's almost as if their orbital planes were in cahoots with that of the Earth...

I have the Star Trek tricorder on mine, it tells me what the Sun is doing, has magnetic scanner and more.. i'm a nerd, yeh.
Angry Birds Rio (the better version imo)
Drinking Water it's useful (for me)
Barcode Scanner is cool, i've been running tru the cupboards scanning everything!
I want Lose it!, but it's not out yet, most sports apps i've seen for Android are crud.
