For out and out full on massive orchestration with choir try Grand Messe des Morts by Berlioz. I played in one of the (four) orchestras for this once - awesome experience. For sheer evocative string writing it's hard to beat Cavaleria Rusticana by Mascagni. Plenty more where those came from.

Smetana's Moldau and just about anything Bach, If you can find Bach's Fugues on pipe organ, go for it.

This just takes me away.



Beethoven's Moonlight Sonata makes me swoon too.
