Its funny but I just happen to be listening to Dragonforce now who were recommended to me by a mosher last Thursday.
Apparently this is power metal.

There are two kinds, American Power Metal, and European Power Metal. While both are centered around melody and emotion, and require high technical proficiency, the American variant is like a more epic, orchestrated form of Heavy Metal, and includes bands like Manowar and Virgin Steele.
European Power Metal, on the other hand, is a more polished, arrangement based style. The center of the song is the chorus, which is usually also the theme of it. It's like a Romantic epic reduced to 4 minutes. Heavy use of melody in the keys and guitars, and highly virtuosic soloing. Operatic vocals are also important. Here are some of my favourite tracks from the genre:

Dragonforce are shite, no sense of song at all, and 3 Inches of Blood don't take themselves seriously at all, trust me. But Deadly Sinners is a badass song.
