Because the way a rational mind works is 'bullshit until proven true'. It's sort of like 'innocent until proven guilty'. If you choose to instead operate on the basis of 'true until proven false' you end up holding any number of opposing beliefs and making little actual progress towards what is true. If you choose 'agnostic until proven true', it's functionally the same as 'bullshit until proven true', but you usually tend to have less arguments with people as you're neither for or against a lot of their claims - a logical coward, so to speak.
