Venison isn't all that expensive in this country. It is in a posh restaurant, but not wholesale.
Farm venison, from a recognised deer farm, is about the same price as beef. But animals from a deer cull don't fetch much.
A while back, they could hardly give it away, but as meat has shot up in price, I expect there's some market for it now.
If I was a poacher, I expect I would try the indian restaurants if I had some deer meat to sell.
