Exhibit A for the defense: Sodium nitrite, used in the preservation of processed meat. The meat curing practices prior 1923, when potassium nitrate (saltpetre) was the standard practice, producing far higher nitrite levels in the meat. These produce carcinogenic nitrosamines. After 1923 the curing practices resulted in a 69% decrease in average nitrite content. This was followed by a precipitous decline in gastric cancer, which prior to 1930s was the leading cause of cancer mortality in the US. How much nitrosamine do you really think sodium ascorbate and sodium erythrobate to prevents?
