LARGE old hardwoods, such as oak, do not burn so well, because they lack the volatile components that you often see in fires, jetting out from the wood. They are also more dense, so flames cannot penetrate them so well, through cell walls.
So the reference to dry wood burning more easily, means dry wood below the usual 20% moisture content of aged oak, and also to dry wood that has been cut into small pieces, as you used to do.
The video of the actual experiment done on an old oak beam of similar size to the cathedral rafters, and the affirmation of the conservation architect, both confirm my above statements.
Furthermore you have ignored all the other relevant evidence, such as the rapid spread, the stand-down of the firemen, the stranger on the roof, the fact that all electricity to the roof was switched off, the fact that no welding or angle grinding was done, the fact that there are security guards on 24/7 watch, the suspicious instant declaration that it was an 'accident', the 800 attacks on churches during the preceding year (including arson), the threats made against Notre Dame itself in the past few days & weeks, the jubilation of many in the crowd of voyeurs as they watched the flames, etc...

The fire didn't spread quickly. There was an alarm that was more or less ignored. The person responsible didn't see anything wrong when he checked the alarm. So the fire could spread for quite some time before becoming obvious.
