As Chinese people celebrate the new Year of the Pig this week, environmental campaigners are urging them to eat less pork and help save the planet.

China consumes more meat than any other country and accounts for half the world’s consumption of pork, which is used in everything from dumplings and stir-fries to hotpots.

That has helped make it the world’s biggest emitter of climate-warming greenhouse gases – according to the UN Food and Agriculture Organization (FAO), livestock are responsible for about 14.5 per cent of global emissions.

My sweetheart makes wonton from a recipe handed down via shady smugglers via Macau and Hong Kong. My neighbour, who comes from Ho Chi Min City, brings me spring rolls she makes, very regularly. Both of those items are bacon-positive.

Even my sports-tracker is bacon-positive. I got this badge of honour for running on New Years Day.

I wonder if observant Jews or Muslims will somehow avoid this year, because bacon is not kosher...

When I was interviewed for a job at a hog processing plant, they actually said to me, 'we kill pigs here. A lot of pigs. We save everything but the asshole and the squeal'.

He wasn't being totally honest. The asshole went into the 'protein pit', which was sold as some horrifying protein to some horrifying cause.

There were pallets of 20lb boxes of pig uteruses. I can't imagine what delicacy needed that particular bit of offal, but life is odd.

I've eaten goose feet, and used chicken feet in stock. Chicken heads and feet are a staple in Swaziland, you get big 10 kilo bags of them in the frozen food section. They call them "walkie talkies". I'm not sure exactly what they do with them.

ETA I ate the goose feet in a Chinese restaurant in Bangkok. They were jellied and quite spicy. Not bad if you could get over the fact that you were eating jellied goose feet.
