I'll start:

The award winning Jeremy Soule for his epic scores
  • Dawn of War
    Company of Heroes
    Final Fantasy
Bill Brown. Not only for games but for television and film as well.
And for old school work:
Frank Klepacki for scoring the original Command & Conquer games in the mid nineties.

That soundtrack rocks 10x more than the game does. Such epic sounds. I often listen to just the music from the game (the game is also available now from Midway as FREEWARE - worth a look).

Although he's a film composer, he's done great work for almost all the Metal Gear Solid games (except the first one). Harry Gregson-Williams.
