A few years back I took the AFI Best 100 Films list and watched them in chronological order over a period of a few months. It's a good history lesson and I discovered a few jewels that I'd missed somehow - It Happened One Night and Network!

There's also the Criterion Collection. I don't think I've seen them select a bad film yet.
