Persians did some cool stuff no doubt and once Islam had captured slaves that could read there was a golden age of translation but when you read this or that was invented by a muslim please fact check, most of the claimed discoveries or firsts are about as truthful as the story of the flying donkey.

A rational skeptic should be able to discuss and debate anything, no matter how much they may personally disagree with that point of view. Discussing a subject is not agreeing with it, but understanding it.

Nobody is saying that in general Arabic/Muslim culture is equally as good/progressively important as western culture (and if they are then he should be specifically answering people who do that, rather than "the left/liberals" in general, - by pointing out the problems with cultural relativism and excessive generalisation). Instead he just generalises the different cultures to say ours is better than theirs. For what purpose is he saying this?

It's politically incorrect to say that some militant aspects are totally inherent to Islam, but it is a fact, nonetheless, unfortunately. I know Sam Harris likes Dervish dances.
