"Proof"? Gnosticism is a statement about the possibility of knowledge. Gods providing rock solid evidence (which they are surely capable of) is an obvious way to gain knowledge of God.
The practice of denying the flesh to gain gnos is a different subject.

Just because you haven't met them doesn't mean they don't exist. I've met people who state, uncategorically, that there is no such thing as 'god'. Usually because they've no interest in hearing what religious people have to say.
