I do enjoy a well poached egg, but it's a non-trivial cooking skill. I've never been able to pull it off. I get the water spinning and drop the egg in the middle and it just goes all shreddy. I've got one of these but it's just not the same.

The way I poach eggs is to use a saucer or small plate in a pan with a glass lid.
Put a small amount of water in, including some into the saucer.
Get it boiling, and then simmer till everything's heated.
Now, with it simmering, just break your egg gently into the saucer and put the lid back on. The steam cooks it, and virtually nothing sticks to the saucer. Mine come out perfect and it's pretty quick.
You do get a rattling noise with the steam bubbling under the saucer, but that's normal.
Put a small amount of water in, including some into the saucer.
Get it boiling, and then simmer till everything's heated.

I poach mine in a metal ladle, submerged in the simmering water. A drop of white wine or cider vinegar in the tank seems to stop the whites going stringy.
