I poach mine in a metal ladle, submerged in the simmering water. A drop of white wine or cider vinegar in the tank seems to stop the whites going stringy.

I just do the simmering water thing, but I do add salt and a good dollop of vinegar. When I remove them with a slotted spoon, I sit it on absorbent paper for a while to remove the excess water.

That's the problem with eggs today, they're coddled little snowflakes. When I were lad eggs were eggs and hens were hens.
