Ham = Schinken? Or is it a special bread made to be used with ham.
Yes, ham = Schinken. Schinkenbrot is the bread you eat with ham, but it does not come with ham any more so than insect repellent comes with insects.
The pic I provided was meant to illustrate the fact; You buy the Schinkenbrot without the ham. Of course nothing nothing stops you from eating it with ham you purchased separately. Then again, nothing forces you to eat it with ham, anything else, or anything at all either.
Scot doesn't like ham..

What is special about the bread then? Does the texture and taste suit ham? Like certain Italian breads suit different Italian food?

Ah, you're getting the drift now.

More about Schinkenbrot here.
Schinkenbrot

A robust rye-based bread of Germany, best with smoked ham and other strongly flavored toppings. Despite its name, the bread's formula does not include Schinken, but some thinly sliced Schwarzwälder Schinken would be a good choice as a topping.

We have what is called 'roggerbrood' made from rye (rogger).

Usually it comes like this:

It's about as heavy. I like Roggenbrot, but one thin slice is enough for me.

It comes originally from Friesland. Keeps for an eternity. It is standard to serve it with 'Snert' (a very thick pea soup) with kattenspek (smoked bacon).

I take it schinkenbrot is different?

The obvious difference is that Roggenbrot consists almost entirely of whole grains of rye. Schinkenbrot does also contain whole grains but consists mostly of rye flour and some partially milled grains. There are probably other differences, but I'm happy to enjoy eating both types of bread without doing further research.

TBH I can take or leave roggerbrood. Frisian sugar bread is something else. Just forget the calorie count though.

Yeah, just slicing that stuff gets me out of breath - workoutbrot! You have to put it in the toaster four times too, but at least a loaf will last you untill until the new King's coronation, so excellent value.
