The seeds increase the slots in your inventory so you can carry more weapons and armour. You have to hand them in to Hestu, who as I recall is in the same location as the master sword. Lynels are a bugger but as you get stronger they can be killed. Mini-spoiler- at your strongest in the game nothing...
